2011 Blanche is tasting great and has become super interesting. It's fresh! and it smells like Asian Pear and Jicama. The mouth is full of green apple, pear skin, and lime cordial.
Blanche is made from hand-picked Chenin Blanc grapes sourced from the Jurassic Park Vineyard on Foxen Canyon Road in Santa Barbara County. 2011 was a long, cool vintage marked by a late harvest and low sugars, producing wines that are intesely aromatic with elegant structure. For this wine, the fruit was pressed whole cluster and the juice was cold settled for 24 hours in tank. Nothing was added before racking into neutral French oak for barrel fermentation, and eight months of ageing prior to bottling.
