Mourvedre. Carignane. Syrah. Even parts.
Mourvedre ripens slowly. Carignane, pretty quick. We pick the two grapes on the same day, when the Carignane is ripe and rich, but the Mourvedre is still lean and racy. We ferment them in the same tank, and then blend the Syrah in before bottling. That's the recipe if you want to make your own. If you'd rather just drink ours, that's fine too. Our M.C.S. is meaty like a hamburger, but has delicious black fruits and savory leather tannins to make it interesting. It's got enough 'Old World' grace to balance out that 'New World' swagger.
