Pale Pink Rose is made from hand-picked Grenache (54%), Cinsault (20%), Carignane (7%), Counoise (7%), Grenache Blanc (7%), Mourvedre (3%) and Syrah (3%). 2016 was and incredible harvest with a foggy and relatively mild growing season, despite the ongoing drought. The wines are deeply concentrated with great freshenss and balance.
The fruit for this wine was destemmed and crushed. The juice was soaked on the skins for about 4 hours – bestowing its light salmon color. At just the right time, the juice was drained from the skins, and then fermented in French oak barrels. Every care was taken to maximize freshness and brightness.
We bottled 14 barrels of this wine in Feb of 2017. Pale Pink has a pretty light salmon color and has a nose of spices (nutmeg, cardamom), sandalwood, and fruity strawberry and cherry notes. The mouth is delicate, crisp, and dry – plenty of strawberries, citrus, and melon with dried herb and mineral flavors for interest. Pale Pink matches up with sunny afternoon sessions with good people. Drink this wine outside. It is surprisingly versatile and goes with anything from salads to quichetogrilledveg. Check it with chilled fruits, or even bbq salmon.
